  • 8 oz mozzarella cheese shredded
  • 8 oz sharp cheddar cheese shredded

Seasonings:

  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Sauce Base:

  • 3 tablespoons salted butter
  • 3 tablespoons all-purpose flour
  • 12 oz can evaporated milk
  • 2 cups heavy cream

Instructions

Cook the Pasta:

  • Bring a large pot of salted water to a boil.
  • Add the cavatappi or elbow macaroni and cook until al dente, following package instructions.
  • Drain the pasta and set aside.

Prepare the Cheese Sauce:

  • In a large saucepan over medium heat, melt the salted butter.
  • Stir in the all-purpose flour, whisking continuously to form a smooth roux; cook for about 1 minute.
  • Gradually pour in the evaporated milk and heavy cream, whisking constantly to ensure a smooth mixture.
  • Continue to cook and stir until the sauce thickens, approximately 5 minutes.

Incorporate the Cheeses and Seasonings:

  • Reduce the heat to low.
  • Add the shredded Colby Jack, mozzarella, and sharp cheddar cheeses to the sauce, reserving a handful of each for topping.
  • Stir until all the cheese has melted and the sauce is smooth and creamy.
  • Mix in the smoked paprika, garlic powder, salt, and black pepper, adjusting to taste.

Combine Pasta and Sauce:

  • Add the cooked pasta to the cheese sauce, stirring gently to ensure each piece is well-coated.

Bake (Optional):

  • Preheat the oven to 375°F (190°C).
  • Transfer the mac and cheese to a greased baking dish.
  • Sprinkle the reserved cheeses evenly over the top.
  • Bake for 20 minutes, or until the top is golden and bubbly.

Serve:

  • Allow the dish to cool for a few minutes before serving.

Notes

  • Cheese Selection: Freshly shredding your cheese enhances meltability and flavor.
  • Pasta Choice: Cavatappi's ridges and spirals hold the cheese sauce well, but feel free to use your preferred pasta shape.
  • Baking: While baking adds a delightful crust, you can skip this step if you prefer a stovetop version.
